Oh Goodness, The Flu Strikes AGAIN

All I can say is the last two days have been two really really really long days. My hubby is under the weather and feeling just awful. He has had a bad fever, and really bad aches and chills. I’ve tried to keep him resting and cozy. The boys are fine though, and bouncing off the walls. The Miss started up tonight, skipped two naps, and then downright refused to go to sleep this evening, so yes this has been one of those days…

I really hope that my hubby is feeling better tomorrow, it is tough seeing him feel so cruddy, and there is nothing that I can do to help. I just hope that this is the flu that the kiddos and I have already had, so just maybe we are immune to it. Surely when the sun shines tomorrow morning, everything will be a little better?!? I hope so anyway, I’m one tired momma.

April’s Monthly Menu

It’s that time again, time for another monthly dinner menu. I’ve got a tasty one planned too, but first I need the motivation to get in the kitchen and get to cooking.

Happy Chickenversary!

On Sunday we not only celebrated with another party for Dylan, but it was the return on Chickenversary ( a term James has coined). You see I only make friend chicken once a year, and it is usually on Father’s Day. This time around though, both sides of the family were  going to be  in town, so I needed to feed everyone. I stocked up on supplies at the store, but then right before the party, I found out that my brother wasn’t going to make it, and then my mother in law and sister in law weren’t able to come to dinner either. I decided that Chickenversary must go on. James was happy about that one.

If you take a look at this picture, you’ll see why Chickenversary is just once a year. It is messy business, but tasty business too.

The tenders were really tasty, and maybe this will get me to put fried chicken on the menu more often.

I made a double batch of Fried Chicken Tenders, a big batch of Biscuits, some Mashed Potatoes, a Cherry Pie for dessert, and a couple gallons of Sweet Tea too. My mom was able to stay for dinner, so that was pretty cool. The kiddos loved the meal too, so it was all worth the mess. I’ll still probably make Fried Chicken for James on Father’s Day, but don’t tell him, Chickenversary is supposed to only happen once a year.

A Mini Party for the Birthday Boy

Yesterday was Dylan’s third birthday, and we are having a big party with the family for him on Sunday. There is a lot to do today and tomorrow too, and we even have a birthday party to go to this afternoon.

To kick off the birthday weekend, we had a little party for Dylan at home. Both of the boys were so excited. Dylan couldn’t wait to open presents, and Thade couldn’t wait to see what Dylan got.

We celebrated with Vanilla Cupcakes and Pancakes for dinner. It was a fun afternoon with the family. Now time to get back to it, there is a lot to be done before tomorrow gets here.
