April’s Vegan Meals: Part 2

Here are a few more photos of the vegan meals from my kitchen. I think I took way too many pictures in April.

Vegan lunch to go

I had to be at the schools extra early for an early out day, so I packed along a wrap. It was pretty darn good.

Some nights call for an easy, throw together dinner of whatever is vegan in the fridge.

o.k. so this is the first vegan meal I won’t be making again… I made some rice and lentil cakes that I pan-fried, and they were way too greasy for me. My stomach just can’t handle it. It was the first Pepcid that I had to take in over one hundred days though…

April Vegan Meals: Part 1

This is going to be another lengthy post, but I’m really proud of myself. I spent another month completely vegan, and as of May 1st that makes one hundred and twenty days!!!

April’s Crafts

The month of April was an absolute blur, and May is following right along in it’s footsteps. The weather is warm, and we seem to have way too many things on the schedule. I’m packing along little crafts when I can, and trying, really trying to finish what I’ve started at home.

I’ve been working on this over sized granny-square blanket for Agnes in bright colors. It seems like whenever I thought I was done, I needed to add a few more rows.

I finally got it finished just in time to throw on her bed for Summer.

The large granny-square is that perfect mixture of just cool enough for Summer nights, but keeps you a little warm too.

I’m also knitting up a stash of odds and ends for a cozy Autumn/Winter blanket for downstairs.

I keep some in a basket upstairs.

I keep some in my too big bag to work on in the car.

I knit until I run out of yarn, and then I wrap it up for stitching in the future.

 

I’m also working on a granny-square blanket for a certain little cutie.

My Sister (in law) is expecting a baby boy in August!!! I’m so excited!

I’m using woodland colors, and crocheting a whole bunch of granny-squares.

It is quite a work in progress. I think I need to crochet another twenty granny-squares, and then figure out how I want to edge this blanket.

May is busy, and I’m still working on the kid’s blankets from last Summer. I keep trying not to start another project, but I feel the urge to get the sewing machine out.
