Last Night’s Turkey


Last night’s turkey+ a few veggies= Yummy Turkey Stock!

Today I’m stocking up the freezer with plenty of turkey stock to be used for future dinners. I use my homemade stock for Turkey Noodles with Mashed Potatoes, or Turkey Noodle Soup. I even sneak in the turkey stock in my Chicken Noodles and Stuffing too.

One Pepper Two Peppers



This week I found a great buy at my local Supercenter-Green Bell Peppers @ $.78 each. I went on ahead and picked up two.

I used some for last nights fajitas, and got 3 batches into the freezer for future fajitas.

Works- for- me- Wednesday


This is my first time posting for Works-for-me-Wednesdays.

My helpful hint is that I use my dessert plates as spoon rests while I’m cooking dinner. It makes less mess on my stove top, and keeps the counters nice and clean too.

I hope one day to have a collection of spoon rests, but until then my dessert plates work just fine for me.

Whats for Lunch?

This seems to be trouble for me. I plan my dinner menus monthly, I can make a pretty mean breakfast, but when it comes to lunch I draw a blank. My husband comes home for lunch everyday, and a few times a week I run out for takeout, which adds up really fast. I’ve been trying to get creative with items that I can keep stocked in the freezer for a quick and inexpensive meal, but I could use a little help. Any suggestions to get me out of my lunch funk would be greatly appreciated.

Waffle Time



I was starving this morning, and staring at the fridge I saw nothing that I wanted for breakfast. I thought waffles might be good, so I peeked in to the freezer, and no waffles were to be found. I decided to dig out my waffle maker and give it a try. I got out my trusty red Betty Crocker cook book and found a quick and easy recipe for the batter.

Thade decided that he wanted to help out too, and kept himself busy stirring the dry ingredients. I cleaned up the waffle maker, and hoped for the best. This was my first attempt at making waffles from scratch, and they turned out so great. They were crispy,light, and much tastier than the frozen ones. I’m definitely taking the time and making these again. The recipe that I used made 12 waffles, and I have my freezer stocked for quick breakfasts.
