Breakfast

I have trouble finding time to make breakfast for myself. I’ll make a Waffle House worthy meal for by hubby on the weekends (he is up and out the door early on weekdays), and the kiddos have a yummy breakfast to start the day everyday, even the cats wake up to a full bowl of kitty food, some how Nico gets neglected in the morning. Most days I’m a grab a cup of coffee and call it good kinda girl 😉  but I end up starving and a little grumpy by 10:00 a.m. Now I’m searching the Internet for a few breakfast recipes to make ahead and stick in the freezer. Then I have no excuse not to stop for breakfast.

I love to make Banana Muffins, and even my hubby likes these. They freeze very well, and I like to double the batch and make 3 mini loaves of Banana Bread (you just have to add about 10-15 minutes extra baking time). I’m also going to check out this recipe for Oatmeal Muffins, they sound pretty tasty to me. The Oatmeal Muffin recipe calls for Skim Milk, but I am going to use 2% I always have that on hand.

I’m getting pretty good at making Baking Powder Biscuits (I use the Betty Crocker recipe), I read in the cook book that you can add cooked bulk sausage into the biscuit dough to bake quick and easy breakfast sandwiches. I just might have to try this one out too, I wonder if they freeze well?

The Winter Weather has Arrived

I’m glad we picked up the winter coat for Thade yesterday, it is freezing today. It looks like snow could be on the way, and soon. We have had the strangest weather around here, last night I was out talking with my neighbor and it was 70 degrees, today it is raining and only 38.

My hubby is off work until Monday! I hope he has a nice vacation and a restful break from work. Today I’m going to be making homemade snacks, stocking the freezer, and trying not to go out unless I have to. Here is what I’ll be making today:

  • Chocolate Oatmeal No-Bake Cookies
  • Cranberry-Lemon Cookies (from a tub, not scratch)
  • Chex Mix
  • Bread Crumbs (to keep in the freezer for later)
  • Mashed Sweet Potatoes for Thanksgiving tomorrow (I make them savory not sweet)

I think I’m going to be in the kitchen all day 😉 It will be fun, and I have Play-Doh to keep Thade busy and helping out too.

Holiday/Winter Pantry

I’ve been searching the sales ads and stocking up for Thanksgiving, when I found out that I won’t be hosting this year. My Sister-in-law has volunteered to take over the hosting duties. I guess I will have to keep my great buys for when I host Christmas.

I had been stocking up my little microwave cabinet with:

  • Stuffing Mix found for $.88 ea
  • Green Beans and Corn for $.50 ea
  • Cake Mixes for $.82 ea
  • Chocolate Icing found for $.49 ( I combined 2 coupons fot the great deal)

I don’t know if the Chocolate Cake Mix and Icing will Make it to Christmas, I think I might have to bake a Bundt Cake in the near future 🙂

Biscuits Anyone?

Tonight I made Baking Powder Biscuits from the Betty Crocker Cookbook. They turned out pretty good, for my first attempt. I made Hammer and Saw shaped biscuits for Thade, and regular round ones for James and me. I turned the saw shaped biscuits into little sandwiches for Thade, but Mr.Picky refused to try them. I thought they were pretty tasty though. I hope to have a few biscuits left for tomorrows breakfast and lunch too. Now I’m off to have one more with honey for dessert 😉
