March’s Veggie Meals

Well, I made it through my three month challenge of going back to vegetarianism, and I loved it. In fact, I’m going to stick with it. I’m feeling so much better, and I’m really enjoying cooking again.

One of my favorite dishes is Veggie Chili. I make a big batch, and then I have plenty for leftovers. It freezes well too.

Veggie Chili also makes super tasty Veggie Chili Mac.

I’ve been experimenting with adding more fruit here and there. Pancake night was a easy place to start. Sometimes I add peanut butter and bananas. This batch I sauteed Gala Apples in orange Juice with cinnamon. I reduced the sauce, and poured it over fluffy pancakes. It was delicious.

My mom has shared her roasted Broccoli recipe with me, and I decided to give it a try. I used fresh veggies that I had on hand, and I added in some frozen veggies too. I poured the Roasted Veggies over pasty, and hello new favorite dinner.

I made an extra large batch, so I would have leftovers for lunch and dinner. Roasted veggies go along beautifully with a big baked potato.

A simple salad with toast at dinner is always fantastic and fresh. Perfect for Spring.

I’ll be posting some more pictures soon. Yay veggies!

March’s Favorite Photos

March was a fun, and very busy month. I still can’t believe that my little man turned eight! He is growing up way too fast. I have a few photos to share of what was going on around our house in March.

I’m ready for some more springtime photos, and sunny days.

March’s Tasty Treats

March was a very busy month. The kids were on Spring Break, we celebrated Dylan’s eighth birthday, and I also had a Cookie Catering gig to bake for. I spent a lot of time in the kitchen, and I have a few photos to share with you.

March brought along my hubby’s assistant manager’s birthday. I made her a big batch of Jumbo Chocolate Chip Cookies to celebrate.

I also made a batch of tiny ones for the kiddos and James. They were gone in a flash.

March also brought along Pi Day 3.14.15, so I made a few pies to celebrate the day. I made a RR Cherry pie, and a Peach with Mixed Berries pie also. They were both pretty darn tasty.

We celebrated Spring’s arrival with a Cherry Jell-O Cake. This cake is always a family favorite.

Before we knew it, it was time for Dylan’s birthday, and a Cookie Catering gig to bake for too. I think I spent three solid days in the kitchen baking.

And, oh goodness, I was so stinking busy that I only took two photos…

For Dylan’s birthday I made thirty Cupcakes for school, and a triple layer Red Velvet Cake, with freshly made Frosting. When we celebrated his birthday with family, I made a batch of Homemade Mint Chocolate Chip Ice Cream, and a Chocolate Bundt cake.

For the Cookie Catering Gig I made Cherry Pie Bars, two dozen Cakerdoodles, two dozen Jumbo Chocolate Chip Cookies, Cupcakes, and one Chocolate Bundt Cake. The desserts were gone in a flash.

I’ve been taking a little break from baking this week. I’m still tired from the last few weeks of craziness.

April’s Monthly Menu

Even though March is a long month, it went by in a hurry. I’m happy that Spring is finally here, and the weather is improving. I’m also happy to bring back some favorite springtime desserts. I’m still sticking with my veggies, but I’m menu planning favorite dinners for the rest of the family.
