6:12 a.m.

I could hear Blue’s Clues this morning, and I looked over at the clock and it was only 6:12 a.m., and yep both kids were wide awake. Oh how I wish I could drink a gigantic cup of coffee, so I would have the energy to get going this morning. At least we’ll get to the grocery store before it is 110 degrees outside, and probably before 8:00 a.m. too… Summertime, you are no friend of mine!

Siwtching Up the Rooms

Every often, my hubby will say to me “it is time to rearrange the rooms”. It used to stress me out, my ocd wasn’t a fan of rearranging rooms , or furniture at all, but now I kinda like it. So when my hubby said to me that it was time to move some furniture, I said go ahead. Happily I got a new spot for my desk.

Now my desk is right under the stairs, and I’m across the room from my hubby. I really like the look of our formal office now, and the kitties like it too, one of them is always taking a nap under my chair.

Filling the Freezer: Biscuit Sandwiches

One of the breakfast treats that I wanted to make for the freezer was Biscuit Sandwiches. I love picking them through the drive thru, but I bet I can make them just as tasty at home.

The ingredients are simple… Fully cooked Sausage patties, and ready to bake Biscuits. Before I baked my biscuits, I brushed them with a little melted margarine, so they would brown up nicely.

Brown your sausage patties in a skillet…. and wait for everyone including the kitties to ambush the kitchen to see what smells so good.

“Give me your biscuit sandwiches” says my kitchen kitty

I really wanted to freeze as many of these as I could, but once the kids spotted them, they had to have a Biscuit Sandwich for lunch.

I topped them off with a little cheese, and both boys approved.

Once the sausage has cooled, place one serving on each of the halved biscuits. If you do have any that the kiddos haven’t already devoured, wrap them in a little plastic wrap, and pop them in the freezer for future breakfasts.

The Biscuit sandwiches are super easy to reheat too, just 30 seconds on one side, and then 30 seconds on the other and you have breakfast any time of the day, or night, without a trip through the drive thru.
