White Chocolate Oatmeal Cookies

Last week I made a batch of White Chocolate Apricot Oatmeal Cookies from my Hershey’s cookbook, and they were so delicious.  I decided to split the batter after I added the White Chocolate Chips, but before I added in the dried fruit. I ended up making one batch of White Chocolate Apricot, and one batch of White Chocolate Cranberry. For each batch I added in 1/4 cup of chopped dried fruit. I also use a melon baller as my cookie scoop, that way I get bite sized cookies, and it makes a few more too.

The White Chocolate Cranberry were my favorite, but I think this recipe would work with just about any dried fruit and chip combination. I thought about making a Dark Chocolate Cherry Oatmeal cookie, or how about a White Chocolate Blueberry Cookie? Now I’m getting hungry 🙂

  1. Ooooh Nicole, you are making me hungry. I think your cookies sound great! I think it would be fun to experiment….you have some good combos. I haven’t done a ton of holiday baking this year…..we get so many goodies at work sent to us that I try to keep it to a minimum at home…..I’ve done the cranberry, chocolate oat bars, tonight we are making chocolate candy cane cookies. The girls and I will make decorated sugar cookies this weekend. Oh, and the doctor/owner of the clinic I work for, yesterday, he gave me an entire box of cranberry bliss bars from Starbucks! Those were a big hit at home….have you ever had those? They are super yummy 🙂 Ellie

    It sounds like you got a terrific Christmas present too, I love love love the Cranberry Bliss Bars. I had one at my last trip to Starbucks, and it was so delicious. We need to figure out a way to make those too 😉

  3. I actually have a recipe for cranberry bliss bars…..haven’t made them yet. Someone I know is a rep for Demarle products (the flexible-silicone bakeware)…..anyway, in her latest newsletter, there was a receipie for them (not sure if they are the actual Starbucks ones though)……I’ll send you an e-mail if I can find it….might be fun (and MUCH cheaper) to make them ourselves 🙂 Ellie

  4. Thanks Ellie! Send me the e-mail, and I’ll give it a try. I love the silicone bakeware. I have a set of silicone muffin cups, and I’m hoping for a Silpat mat for my birthday. It would come in pretty handy with the cookie baking.
