Monthly Dinner Menu: February

Hello February, and hello leap-day, one of my very favorite days. I’ve got my dinner menu planned for the month. This menu is what I’m making for my family, I’m still sticking with my veggies. Thirteen months vegetarian, so far.

So here is what I’ll be cooking in February:

  • 2/1/2016: BBQ Wings, Roasted Veggies, and Mac & Cheese
  • 2/2/2016: Tostadas, Tortilla Chips, and Salsa
  • 2/3/2016: Chili, Saltines, and Cornbread
  • 2/4/2016: Tacos, Tortilla Chips, and Salsa
  • 2/5/2016: Take-out!
  • 2/6/2016: Bacon, Toast, Cinnamon Rolls, and Breakfast Potatoes
  • 2/7/2016: BBQ Wings, Veggies & Hummus, Chips & Dip, Chex Mix, and Cookies
  • 2/8/2016: Panko Chicken Sandwiches and Tater Tots
  • 2/9/2016: Chicken Soft Tacos, Tortilla Chips, and Salsa
  • 2/10/2016: Panko Chicken Tenders, Mashed Potatoes, and Haluski
  • 2/11/2016: Beef Soft Tacos, Tortilla Chips, and Salsa
  • 2/12/2016: Take-out!
  • 2/13/2016: Steaks, Pasta with Veggies, and Baked Potatoes
  • 2/14/2016: Pot Roast with Potatoes, and Dinner Rolls
  • 2/15/2016: Popcorn Chicken and Fries
  • 2/16/2016: Tostadas, Tacos, Tortilla Chips, and Salsa
  • 2/17/2016: Salmon Cakes, Rice, and Roasted Veggies
  • 2/18/2016: Tacos, Tortilla Chips, and Salsa
  • 2/19/2016: Take-out!
  • 2/20/2016: Pancakes and Bacon
  • 2/21/2016: Steaks and Baked Potatoes
  • 2/22/2016: Panko Chicken Tenders, Mashed Potatoes, and Corn
  • 2/23/2016: Chicken Soft Tacos, Tortilla Chips, and Salsa
  • 2/24/2016: BBQ Wings, Baked Ziti, Mashed Potatoes, and Dinner Rolls
  • 2/25/2016: Tacos, Tortilla Chips, and Salsa
  • 2/26/2016: Take-out!
  • 2/27/2016: Steaks and Steak Fries
  • 2/28/2016: Fried Chicken, Baked Ziti, Mashed Potatoes, Dinner Rolls, and Pie
  • 2/29/2016: Chicken Noodles, Mashed Potatoes, and Dinner Rolls

January was pretty nice in the weather department. I might keep a bit more on hand, just in case we see lots of snow and ice in February. I’m off to check on my cake, and get back to it.

This Week:

This week I’ve bummed around the house, doing a bit of cleaning, washing dishes and laundry, and working on the kid’s bedrooms. There has been endless cooking, and baking going on in the kitchen.

On a happier note, I got to babysit my darling nieces, and spend some much time with my Sister (in law)

I finished up one knitting project, and started one more. I also started another crocheted blanket for Thade.

Speaking of Thade…

The big kid celebrated his 12th birthday on Friday!

I can’t believe that my oldest kiddo is almost a teenager. It is crazy!!!

February is almost here. I’ve got a menu to plan, and shopping lists to make. The kids just wandered back downstairs, and are asking for snacks. Better get back to it.

Snow Day

Well the kiddos got their wish. Today is a snow day. It is more ice than snow, but we’ll take it!

We got to sleep in a bit, and this afternoon we are watching some movies and enjoying some snacks. There is more snow on the way, so who knows, this might turn into a snow week.

It’s Cold Outside

The weather has gotten downright nasty and cold in Kansas. We had ice this afternoon and it took me quite a bit to get the kiddos home. The kids are hoping for a snow day tomorrow, but I’m hoping that the weather will clear. We’ll see what happens though.
