Clearing Out The Clutter

While the kids home for a good three weeks on Christmas break, the house got trashed… There is stuff piled here, there, and everywhere, it is driving me crazy! Monday, I woke up extra early, and cleaned the living room. I got a big bag of clutter out of the house, just from one corner of the room. I was feeling pretty good about it, so I moved on to one of the kitchen cabinets. I got another full bag out, and now I’ve got a little more space to store paper towels. Both of those cleaning tasks were fast, and I’m going to keep it up throughout the house.

I’ve also cleaned out the closets. I cleaned out my closet, and all of the kids closets right before Christmas. I love the donation bins around town, they make it easy to donate unused and outgrown clothes.

Today, the kids were back to school, so I spent a lot of time just catching up on dishes and laundry. Next week, I hope to get a few larger cleaning projects accomplished.

Sneaking in Vegan Meals

This year I’m still going strong with vegetarianism. I’m adding more vegan dishes to my menu. I hope to be 50/50 vegan-vegetarian by 2018.

  
Tostadas! Vegan for me, vegetarian for the family. This is one sneaky  dish that everyone loves.

 
Beans and Rice. I add in homemade salsa and frozen  corn while heating up the rice. 

 
Vegan Chili. This dish is one of my favorites. I make a big batch and freeze it for future meals. I even got my  carnivore hubby to try this one out. He said it was “pretty good”.

 
Roasted veggies, Baked sweet potato, and homemade veggie rice-a-roni. I used what I had on  hand, and made one delicious meal.
 
Last night’s dinner for me was baked sweet potatoes and rice with garlic and soy sauce. Vegan and tasty. 

I’ll post some more meals soon. I’m off to the store to restock.

2017 Goals & Resolutions

2017 has finally arrived, and two days into the new year I’m feeling motivated. I’ve made a few resolutions and goals for 2017. 

New Year’s Resolutions:

  • Tackle one grown-up task per month
  • Learn to apply make-up
  • Keep a stocked pantry
  • Be sincere to myself, don’t invite drama

2017 Goals:

  • Buy new furniture
  • Deep clean/purge/organize every single square inch of the house
  • Get new flooring throughout the house
  • Keep up with being a vegetarian, make more vegan choices

I’m also starting a year long crochet project. 

  
I’ve started a temperture blanket for 2017. I check the high temp for the day, and crochet a row. I think it will be a fun project.

Autumn is my very favorite season. This Autumn we had really funny weather, and I never thought the pretty fall leaves would arrive.

Winter has arrived, and we’ve even had a few snowstorms this season. I’m ready for 2017 to get here too!
