May 2009 Monthly Dinner Menu

Wow! April flew by, and it is time to plan for another monthly menu. I hope that May brings warmer Spring weather, and plenty of delicious treats from the Farmer’s Market. I grabbed my calendar and planned out the menu for May. Here is what I’ll be making for dinner this month:

  • 5/14/09: Bean & Cheese Quesadillas, Tortilla Chips, Salsa, and Cheese Dip
  • 5/15/09: Chicken Nuggets, Corn, and Macaroni & Cheese
  • 5/16/09: Lasagna and Garlic Bread
  • 5/17/09: Salmon Cakes, Corn, and Rice
  • 5/18/09: Angus Burgers and Fries

Bake and Bake and Bake and Bake

A few weeks ago, a friend asked me just how often I bake something for my family. I came up with about 5 times a week, but this week is one of those exceptions. I have been baking non-stop since Monday. I’m helping out my hubby with 3 days of baked goods for work, I’m bringing snacks for preschool on Friday, and I had a request for cake pops from a few of the preschoolers. Oh yeah 2 MOPS Mommies and I are bringing breakfast for Friday, so that means more baking to be done… Basically I have been living in the kitchen, but it has been a blast making all of these goodies.

This week I’ve baked:

  • Chocolate Sheet Cake for Cake Pops
  • 2 Batches of Homemade Cinnamon Rolls
  • 2 Batches of Banana Muffins
  • 2 Batches of Brownies
  • 1 Batch of No-bake cookies
  • 1 Batch of Chocolate Chip cookies

Today I’ve still got to make:

  • Cherry Pie
  • Dutch Apple Pie
  • 2 batches of muffins for MOPS
  • Chocolate Bundt Cake
  • Oreo Pie
  • Peach Bundt Cake
  • Double layer Vanilla Cake
  • Chocolate dip all of those cake pops

It looks like it is going to be another busy day at Nico’s kitchen!

School Days

Today we’ve got another busy day ahead of us, and Thade is getting ready for kindergarten. We have kindergarten round up to go to this afternoon, and Thade is really excited about getting to go. I’m a little sad though, I can’t believe that he is already ready to go to school. Thank goodness it doesn’t start until August, but it is still tough on this Mommy.

Let The Car Calling Begin

Today I think I have been on the phone non stop, calling insurance for a tow, and then calling my hubby with the info, and I’ve still got to call the repair shop and see just what they think the problem is. I just hope that it can be fixed and soon. This is one super busy week, and I really need to have my car working. Wish me luck, time to get back on the phone.

A Day Out With the MOPS Girls

Yesterday was an amazing day, and it started at 5:00 a.m. I was so excited to be attending the MOPS conference in Leawood with our local MOPS Steering team. I’m joining the Steering team in the Fall, and I will be the Hospitality steering team member. The conference was great and we all got to meet many amazing mommies. I learned so many great tips, and had a lot of fun hanging out with the MOPS Moms.

James had Saturday off, so he stayed home to take care of the little guys. He did an amazing job too, the kids had a blast getting to spend Saturday with Dad. I even heard that Dad makes some pretty good breakfast. It was nice to come home though, and get lots of hugs from my boy’s.

After the conference was over, we stopped in Overland Park for dinner and ice cream too. The day was a blast, and I can’t wait to get started on the Steering team for 2009/2010.
