October’s Veggie Meals

Well I’ve ventured back into the world of vegetarianism. I made it a good nine months, strictly vegan, and then I broke down and ate Pizza Hut… I was a little disappointed with myself, I seriously have no will power, but then I decided that maybe I could still eat vegan, but vegetarian here and there.

So I’m back in the kitchen, getting dishes back in order, and I’ve got a few photos to share.

I made this magically amazingly delicious (from scratch) vegan soup. I ended up making a few batches of it throughout the month. It’s a kale with potato, and plenty of nutritional yeast super yummy soup that was so good I even had it for breakfast.

I’ve been running into some pretty fantastic veggie sales at my favorite store. Kale and Mushrooms were on sale, and I added them to some Quinoa. It was really delicious.

I also made a batch of Kale and Mushroom Rice. This dish has become one of my very favorite things to cook, and to eat.

If you have any leftover Kale and Mushroom Rice you can add it to some veggie stock and make a delicious soup for an extra cold day.

I made a big batch of Mushroom Lo Mien. It was so very good.

I picked up some Tofurkey Sausage and threw it in some pasta. I wasn’t too much a fan of this one.

Tofu Scramble is always a favorite of mine.

I made another batch of the magical Kale and Potato Soup. This has become one of my very favorite vegan dishes. It is just delicious.

 

 

October Crafts

I knitted my way through October.

I took my knitting outdoors,

I knitted a bit upstairs too.

I even did a little bit of baking, and knitted downstairs too.

October was so incredibly busy that I didn’t work on too many crafty projects. Maybe I’ll get a few more going this month.

 

October: In The Garden

I’m a little sad that the summer vegetable season is winding down. Agnes and I really enjoyed tending to the tomatoes.

Agnes picked a bunch of yummy tomatoes.

I picked a few more before the temperature started to get too low.

The clouds are starting to get lower too. The sky looks a bit more like Winter is on the way.

We still have a few little birds visiting the backyard.

The mums are still in bloom, and the trees in the neighborhood are showing some beautiful color.

I just love our little town this time of the year.

 

Favorite Photos from October

I didn’t take too many photos throughout the month of October. I do have a few to share from around the house and Halloween.

My neighbor surprised me with a bouquet of flowers.

I finally placed the yard sale shelves in the kitchen.

Agnes was a dark fairy for Halloween. There was a parade and party at school.

Dylan was a plague doctor for Halloween.

I took a few photos of our little town while we were out trick-or-treating. This is one of my very very favorite homes in town.

I love the leaves this time of year.
