Wow! April flew by, and it is time to plan for another monthly menu. I hope that May brings warmer Spring weather, and plenty of delicious treats from the Farmer’s Market. I grabbed my calendar and planned out the menu for May. Here is what I’ll be making for dinner this month:

- 5/9/09: Beef Stew and Homemade Bread
- 5/10/09: BBQ Chicken, Mashed Potatoes, Pasta Salad, and Corn
- 5/11/09: Nacho Night
- 5/12/09: Spaghetti and Garlic Bread
- 5/13/09: Pop-corn Shrimp, Macaroni & Cheese, and Fries
- 5/14/09: Bean & Cheese Quesadillas, Tortilla Chips, Salsa, and Cheese Dip
- 5/15/09: Chicken Nuggets, Corn, and Macaroni & Cheese
- 5/16/09: Lasagna and Garlic Bread
- 5/17/09: Salmon Cakes, Corn, and Rice
- 5/18/09: Angus Burgers and Fries
- 5/19/09: Spaghetti and Garlic Bread
- 5/20/09: Chicken Fajitas, Re-fried Beans, Tortilla Chips, and Cheese Dip
- 5/21/09: Grilled Chicken, Corn, and Rice
- 5/22/09: Dinner Out! James and Nico in K.C.
- 5/23/09: Fish Planks, Macaroni & Cheese, and Fries
- 5/24/09: Pot Roast and Potatoes
- 5/25/09: Grilled Hot Dogs, Potato Chips, and Dip

- 5/27/09: BBQ Beef Sandwiches, Potato Chips, and Dip

ok, i took a baby step in April and wrote down all my meals as I cooked them on a blank calendar. It’s something. Then I can look back and see what we’ve ate.
On good weeks, I actually plan the meals for the week. I’ve never made it to a whole month- you inspire me!!
Thanks Heather! That is awesome! It sounds like you are doing a great job with your menu planning too. I love to plan for the month, but sometimes I can be a little bad about sticking to my plan 😉 Keep up the great work!
It all sounds great! Could I please have your cheese dip recipe? I looked over your blog and couldn’t find it. I thought you had posted it once, but I have Mommy brain……who knows! lol!

Thanks Marva! You got it 🙂 The cheese dip recipe that I like to make is 1/2-1 whole Block of Velveeta Cheese, 1 can Rotel tomatoes with Chilies, and 1/2 Cup of Salsa. Combine all of the ingredients into a crock pot or cook it on low on the stove. If you like your cheese dip spicy use 1/2 of a block of velveeta, and if you like it mild use the entire block 🙂 Hope you like it.
It is my favorite, but my boy’s like the ready made stuff 😉 Silly boys, they don’t know what they are missing.
