March was one of those months where I was constantly playing catch-up. It’s now April, and I’m still not caught up on it all. I was sick with migraines a lot in March, and I just wasn’t in the kitchen as much as I should have been.
I also wanted to spend most of my time at the craft table, so that didn’t help my kitchen motivation too much either.
I do have several photos to share, when I finally got off my butt, and got back to cooking.
That my friends is six pounds of panko, and a new book too. I hope this lasts me a bit.
I’ve been taking coffee with me when I go pick up the boys. This cup went along on a migraine day.
I made a few batches of cookies.
I made a big batch of Pepperoni Pizza Rolls. Some were for the boy’s lunch, and some were headed to the freezer. I’m stocking the freezer for our vacation this month, and these rolls freeze well.
I made a no-bake Cherry Cheesecake. I love cheesecake, but my family just isn’t a fan. This one was easy to make, and super tasty too. I’m making a blueberry-lemon one for Easter.
I can’t resist picking up a Pineapple whenever I see them at the store.
For the first day of Spring, we had a yummy, light dinner. That also called for a Cherry Jell-O Cake.
Whenever anyone in our family has a birthday, I always let them pick the meal. In March, it was Dylan’s. In true Southeast Kansas tradition, Dylan picked Fried Chicken and Spaghetti.
He also wanted a chocolate cake made from scratch, with extra icing.
The chocolate cake was crazy good!
A few days after Dylan’s birthday, I came down with a ridiculous migraine, that made me sick for days.
I still didn’t feel like eating much, but it was Shamrock Shake month after all.
When I finally felt better, I made a Cinnamon Cake for my hubby to say thanks for helping me out when I was feeling awful.
My family loves this cake. I ended up making two of them in two days. I can’t complain though, I love baking desserts for my darlings.

Nicole, that all looks so delicious!! I always ask my mom for a no-bake cherry cheesecake for my birthday, it’s my favourite 🙂
