February’s Veggie Meals

Since the beginning of January, I’ve gone back to being a vegetarian, lacto-ovo vegetarian to be specific.

Now I didn’t become a vegetarian to lose weight, I was just tired of my stomach hurting every single time that I ate a meal.

Also, I haven’t changed the meals that I am making for my family. I still make their favorites, I just made something else for me. I have gotten the kids to try a few of the veggie dishes though, so that is a win.

For the first month. I didn’t really menu plan at all. I ate what I had on hand fresh, and it took me about two weeks for my tummy to get on board with the changes. Two months later, I am feeling so much better. My stomach has been cooperating, and I’m really enjoying the vegetarian dishes.

I am also having a blast cooking again. I had been in a cooking rut for quite a bit, and exploring new dishes, and making new recipes has been great.

As for February, again I didn’t really menu plan for my meals. I did keep track of the entire month of meals.

  • 2/10/2015: Broccoli and Potato Soup with Saltines
  • 2/11/2015: Tortilla Chips & Guacamole, Avocado and Roma Tomato Salad
  • 2/12/2015: Steamed Green Beans with Onions, Mashed Potatoes, and Butter Rolls
  • 2/13/2015: Corn Casserole, Roma Tomato Salad, and Baked Sweet Potato
  • 2/14/2015: Belgian Waffles with Cool Whip and Strawberries
  • 2/15/2015: Baked Potato with Broccoli and Cheese, and Corn Casserole
  • 2/16/2015: Take-out @ McDonald’s: Two Fruit and Yogurt parfaits

So far I have really enjoyed being a vegetarian again. I’ve decided to try for one month, and then see how I am feeling. I’ll keep track of my meals again, and hopefully try a few new dishes too.
