September absolutely flew by. I made lots of tasty dishes and stuck with my veggies. Some of the meals were vegan, and some were vegetarian. All of them were pretty tasty.

October is in full swing, and so far I have been living in the kitchen. I’ll have a bunch more photos to share soon.

August’s Veggie Meals

August was a pretty tasty month. I made lots of vegan and vegetarian meals. I even convinced my family to try a few of them.

Simple Salad and Breadsticks.

I should really make homemade breadsticks more often, they make a fantastic side to just about everything.

Super tasty, super quick, and a good way to use up leftovers.

This is one of my very favorites. I like it all by itself when I don’t feel like cooking.

And then salad and homemade bread for dinner. It must have been just too hot to cook on this August day, or I had salad in the fridge that I needed to use.

Lately, I’m hooked on all things Vegan Veggie Wraps. This one had a sliced avocado, and it was tasty and cool.

It was time to clean out the fridge and use up all of the produce hiding out. Perfect solution, make a big batch of soup, and freeze it for later meals.

This has become my go-to dinner when the family wants Panko Chicken, and I do too, but I’m not going to eat it. Hello Cauliflower, the perfect substitute.

I made this tasty dish with leftovers from the fridge. These little pinwheels were fantastic.

I pile this wrap full of homemade Hummus, black olives, homemade salsa, and lots of shredded lettuce. This is good for a snack, or a meal.

I really loved this dish. I am a big fan of Chinese take-out, but I want it vegan. I decided to make my own, and it was just amazing. I’ll be making this again, and again, and again.

Baked Sweet Potato and Vegan Corn Pudding

I was craving corn pudding full of cheese, and heavy cream, and all that awesome dairy that I know I shouldn’t be eating, so I veganized it, and it was pretty good. It wasn’t as rich and filling as the original, but my tummy didn’t complain.

I also tried to go completely vegan in August. I only made it five days, but that is pretty good. I am trying to eat at least 2/3 of my meals vegan every day, and I’m cutting back on my soda drinking too.

We’ll see how September goes…

Four Days Vegan

Part of my self-care for the school year is getting my eating habits back in order. Over the Summer I was pretty bad about skipping breakfast, grabbing a soda way too many times during the day, and at night, and eating lots and lots of junk… With the kids at school I have a little more time to research meals, and get them prepped too.

That leads me to gently going vegan. I’m approaching my third year as a lacto-ovo-vegetarian, but with an egg and milk allergy, it is time to ditch the lacto-ovo part. That means learning to make lots of new dishes, and giving up on my beloved cheese pizza.

So far I’ve made it four days soda free, and fully vegan. I actually feel a lot better, and I have a bunch of energy. I don’t know how long I’ll make it, but so far so good. The downside, I’m hungry about every two hours. I walk in the morning after I drop off the kids at school, but then I’m ravenous and could eat my own arm.

I’ve been working on stocking the fridge with ready to go veggies, hummus, rice, and fresh fruit. I’m also making soups for the freezer, that way I can just reheat one while I’m making dinner for the family. There are a lot of dishes to be done, but I think this is going to be a good change for me. Or I’m completely nuts.

 

July’s Veggie Meals

Get ready for an extra long post. I have lots of vegetarian and vegan photos to share.

Vegan Quinoa Bowl

This was one tasty dish. I added in an avocado, and cherry tomatoes from our garden.

Vegan Taco Seasoned Quinoa and Guacamole. This is one versatile vegan staple. You can serve the quinoa in a bowl, in a burrito, in a taco, stuff it in peppers, man it is good.

Vegan Mexican Bowl. I’ve been experimenting with lots of different types of grain bowls. This one was filling, and really delicious.

Vegan Rice and Roasted Veggies

Vegan Bowtie Pasta and Blistered Cherry Tomatoes. Oh goodness, I really loved this dish.The tomatoes were from the garden, and they were perfect.

Vegan Kimchi Sushi with Edamame. Vegan Sushi is pretty much my very favorite food on the planet. I could eat it for breakfast, lunch, and dinner, and snacks too.

Vegetarian Leftovers from the fridge. I love vegetarian cooking. I make big batches, and live off of the leftovers.

Vegan Noodle Bowl. I always double this recipe, and eat the leftover noodles cold.

Vegan Quinoa and Blistered Tomatoes. I had a pretty good crop of cherry tomatoes, and this was a tasty solution for all of those homegrown goods.

Vegan light and cool lunch, because sometimes it is just too hot to cook in Kansas.

Fresh Watermelon with Kosher Salt, this was lunch and dinner one day for me. Seriously, Summer in Kansas is miserably hot.

Vegetarian Tomato Pie. I tried out a new dish, and I really liked it.

Vegan Rice Noodle Bowl. This was another “clean out the fridge and use all of the veggies” lunch. I love rice noodles with just about any veggie.

Homemade Take-Out!!! I miss the Tostadas at my favorite restaurant in Missouri. I can make a pretty close vegan version at home though.

August is flying by, and I’ve been sticking to being mostly vegan. It has been a tasty month already.
