Vegan Meals from June: part 3

I’m rounding out this monthly post, and I have lots of photos to share.

Panko Fried Cauliflower is my go-to meal whenever I’m making Panko Fried Chicken for the family. It is so darn delicious, I don’t miss chicken at all.

I tried my hand at making Panko Fried Tofu. The kids really liked this dish, and ate about half of mine, along with their panko fried chicken dinner.

Gifts from my gardening buddy Mr. Hunt, the cutest little 80-something on the planet. In the Spring Mr.Hunt and I talk about our future gardens, and he always promises me some veggies. This year we talked about me going vegan, and he was worried. Every week he sneaks me in a big bag of home grown produce, because he doesn’t want me to starve. I just love him.

I made some delicious pasta salad with the freshly grown Cucumber, and I also made Panko Breaded Yellow Squash. They were absolutely delicious. I prepped and froze the extra yellow squash, and now I’m set for quite awhile.

It is getting easier and easier sticking to my vegan ways. I really don’t even think about it anymore, it’s just normal for me now. I’ve been happy that my family is trying out a few of the dishes too. It has surprised me at just how many new veggies they actually like.

July will make seven months, and I’m going to do my best to remain vegan for the rest of the year.

 

Vegan Meals in June: part 2

I tried out a few new vegan recipes, and even got the family to try one of them too.

I made a big batch of vegan Banana Muffins. I love veganizing recipes, and the kids like this one too.

Super Cheezy Vegan Scalloped Potatoes. I’ve been on a bit of a potato kick, and I had some vegan cheese to use up in the fridge.

I made up a big batch of Rice & Lentil Neatballs. They freeze beautifully, and now my freezer is stocked with future vegan meals. They are also really good with Spaghetti and homemade Breadsticks.

So I was trying not to go to the store, and I was using up whatever I had on hand. I was making dinner for the family (I’m pretty sure it was panko fried chicken) and I needed a side. I made a batch of vegan Onion Rings. The family really liked them. Next time, I’m going to have to triple the batch.

When my mom was visiting I made a batch of Strawberry-Peach vegan Nice-cream. It was pretty tasty, and made good use of Summer fruits.

I made an amazing batch of Vegan Mac & Cheeze.

I had some leftover, so I added in some Broccoli for a fast and delicious lunch.

 

Vegan Meals from June: part 1

Well I surprised myself, and made it a full six months entirely vegan. I honestly didn’t think that I could make it a month, let alone six. So many things have changed for me health-wise, and I really don’t see myself going back.

I have a bunch of photos to share from my kitchen.

Yep, Pizza Bagels and they are completely vegan!!! I’m so happy that I can find tasty vegan cheese locally.

Cheezy Pasta with Collard Greens. Dylan has been encouraging me to try new veggies that I haven’t made just yet. Collard Greens were one that I wanted to try, and holy moly are they good.

Cheezy Pasta. A few times a week I like to make up a big batch of whatever I feel like at the moment, and then I’ve got meals for a week in the fridge. This cheezy spaghetti was so good.

In the ever enduring quest to find a meal that my entire family will eat, and it also can be vegan, vegetarian, or even omni, Taco Bowls are the winner. I serve them up for lunch or dinner, and usually clean out all of the odds and ends hiding out in the fridge.

Tacos also can be vegan, vegetarian, or even omni, and my family will usually not complain too much about them. This batch was seasoned Chickpea Tacos for me, they were delicious. I think I ate six of them.

When it is too hot to cook, and I can’t think of another meal to make, Snack Dinner to the rescue. This also helps clean out the fridge and pantry. It is also just plain delicious.

Homemade take-out Vegan Lo Mien. This is amazing hot or cold. I made a giant batch and keep it in the fridge for future meals, snacks, or ahem breakfast.

Yummy Kale Greens with Rice & Lentils. Rice and Lentils are another amazingly versatile vegan staple. They pair fantastic with the greens and really fill you up.

While we were trying new things, Dylan and I picked up an Artichoke to cook. I always keep marinated artichoke hearts in the fridge, but I’ve never actually prepared one. I got a tip from one of my buddies at the grocery store, and I whipped up some garlic-vegan-butter while the artichoke was cooking. This was so good paired with Baked Potato Wedges, and even Dylan liked the Artichoke. It was a lot of work though, I don’t quite have the hang of artichoke preparation just yet…

I think I have another three or four posts in this series, and goodness we are already well into July. I’ve been enjoying lots of homegrown tomato dishes, and my gardening buddy hooked me up with some homegrown produce too. Summer is a good time to try out those veggies that you’ve been wanting to try, everything is so good right now.

I grew some beautiful Cilantro in our little garden. These lovely greens were from last year’s seeds that dropped into a planter. Now, personally, I like Cilantro, but while cooking an innocent meal for my family, I learned just how much they really don’t like Cilantro.

I made Cilantro-Lime Rice, and everyone tried it, and only I liked it. I also got griped at by everyone for making the worst meal ever. It was Fajitas, homemade guacamole, and chili-lime corn, along with the hated rice. They are crazy, it was delicious.

I was pretty bummed when I found out that my favorite local grocer was no longer carrying Vegan Chocolate Chips, but I lucked out and found them in Missouri! One more reason to visit my home state.

So one of my goals is to perfect homemade vegan ice cream by the Fourth of July. I’m making each batch from scratch, and coming up with the recipes all on my own. This was a batch of double chocolate with a banana base. I thought it was amazing, Agnes said it was completely gross!

June is here, and I am trying even more items that I’ve never had before. Dylan and Agnes have discovered a bunch of vegan snacks that they like, and they are trying a few more vegan foods too. I still don’t have the boundless energy that is supposed to follow veganism, but my health has truly improved.
