Quiet Evening

Last night we decided to have Valentine’s dinner at home, and it was so much fun. My hubby took off work a bit early so we could watch the Gatorade Duels at Daytona, I’m so glad that NASCAR is finally back. I made a big dinner, and we were going to even toast with a bottle of wine.

I was busy in the kitchen cooking and trying my hardest to uncork that bottle of wine (note to self purchase a proper opener, my Swiss Army knife opener isn’t working), I finally opened the bottle, poured our two glasses and presented them to my hubby. We toasted to each other, and took one sip, and we both realized that we were not a fan of the White wine. So I made two cocktails and we re-toasted πŸ™‚

For dinner I made Steak and Steak Fries for my hubby, and I had Shrimp Scampi over Spaghetti, both were delicious. I made a big batch of Brownies for dessert too πŸ™‚ It was such a great Valentine’s Day, and we had so much fun watching NASCAR! Staying in might become a Valentine’s Day tradition πŸ™‚

Oatmeal for Breakfast

Last night at bed-time Thade said that he would like to try Oatmeal for Breakfast. I thought great, a healthy inexpensive breakfast, and Thade is wanting to try a new food, this is good:)

Early thisΒ  morning we were in the kitchen prepping the breakfast, I was in charge of the stove, and Thade stirred the uncooked Oats in his Spiderman bowl. When the water was boiling, he happily handed over the stirred oats. After about a minute of me stirring and breakfast was ready. I waited a little bit for the Oatmeal to cool, and presented the yummy bowl of Brown Sugar Oatmeal. Thade looked at the bowl rather oddly, and poked at the Oatmeal with his Spiderman spoon. He said “this is Oatmeal, I like it better in cookies”.

He did try one bite, and then asked for cereal instead. At least he tried, and I got to eat the Brown Sugar Oatmeal in the Spiderman bowl for my breakfast, it was pretty tasty πŸ™‚

Bento for the New Year

In celebration of Chinese New Year, I made a special dinner tonight πŸ™‚ We had Beef and Broccoli Stir-Fry with Jasmine Rice, Long Noodles, and Fresh Oranges. It was pretty tasty. I served Thade’s portion Bento Style, and he actually tried everything (a first). He liked the noodles the best, but he wasn’t a fan of the Beef and Broccoli Stir-fry, oh well.Β  Happy Chinese New Year to all πŸ™‚

Still Feeling Icky

This morning my throat is worse, and the sinus pressure is driving me batty. Thade was up late last night with the sniffles, and Dylan was up late too. 7:00 a.m. arrived all too early this morning, and I needed to make breakfast.

This morning I attempted to make a Puffy Oven Pancake, it didn’t puff as much as I thought it would, maybe I over mixed it. Even though it wasn’t too fluffy James and I ate every bite of the Pancake. It was really delicious πŸ™‚ I think I’ll add it to the breakfast menu!

I also had 2 large cups of coffee in my new coffee cup (thanks Hubby) with a box of Vicks scented Puffs (thanks Mom) to help out my head cold.

Use What You’ve Got: Desserts

I was putting together tonight’s Chili, and I needed to make a dessert to go with it. I thought about making a batch of Brownies, but then I remembered the Cookie Dough that was hanging out in the fridge. I thought I would make the Cookie Dough into Cookie Bars, and they turned out great. I even melted some Hershey Kisses on top for the icing. I used everything that I had on hand, so no last minute trip to the store. Thade and I have already split three of the tasty Cookie Bars. Oh the cookie goodness πŸ˜‰
