The weather is cold and rainy, and we all are stuck indoors. We decided to rent Alvin and the Chipmunks from RedBox, and I made Rice Krispies treats and Chocolate Milk for the boys. Dylan and Thade were both thrilled with the special snacks!

Oops Potato Soup
I was making Scalloped Potatoes for dinner last night and somehow I accidentally added in too much water. Perhaps I was distracted by too many boys in the kitchen. When the Scalloped Potatoes made it out of the oven they were super soupy, even too soupy for Dylan to eat. What will I do with this failed dish…. Blend it up and call it Oops Potato Soup!
I waited until the Scalloped Potatoes cooled a bit, and then I carefully spooned them in to the Blender.
I added in a little Whole Milk until I got a nice smooth constancy.
Since we had already had dinner, I put the Potato Soup in a container, and its off to the freezer for later.
I think when I reheat the soup I’ll (accidentally) add in a little Shredded Cheddar Cheese, Chopped Broccoli, and maybe even a little crumbled Bacon.
I think the soup would go great with Grilled Cheese sandwiches, or Bacon Sandwiches, although you can never go wrong with Homemade Garlic Toast or Crunchy Croutons. I just might like Scalloped Potatoes even better as Oops Potato Soup.
Busy Kitchen Days
I’m going to be in the kitchen a lot this week. The weather is cool and perfect for baking.
Today I’ve baked a batch of Yellow Cupcakes and I got to use my belated Anniversary gift to decorate them. James ordered me a Betty Crocker Cake Decorating kit, and I had a fun time trying to decorate the cupcakes. I even got ambitious and made homemade Chocolate Buttercream Frosting. I need a bit more practice, but I don’t think that the boy’s will mind the extra treats. I also baked 3 loaves of bread, one for the fridge, one for the freezer, and a tiny one for my Mom.
Tomorrow the baking continues. I volunteered to help bring breakfast for MOPS on Friday, and I’m planning on making three dozen muffins. I’m bringing three varieties of Oatmeal Muffins for the meeting. I’m thinking about baking regular Oatmeal muffins, Oatmeal Raisin Muffins, and Cranberry Oatmeal Muffins too. Not all of them might make it to the meeting though, we might have to try a few of them out.
I think on Friday I’ll restock the cookies with a batch of No-bake Chocolate Oatmeal Cookies for the boy’s, and I might even throw a Chocolate Bundt Cake in the oven for the weekend.

Stumbling Baked Goods
Do you use Stumble Upon? I love it, and every once in awhile I will stumble onto a new recipe that I have to try. I was in the mood to get in the kitchen and bake something tasty, so I hit my Stumble button, and I decided that I would make the next recipe that I saw, and there it was Giant Breakfast Cookies! Perfect, I am always looking for a quick and easy breakfast that the kids and I will love.
This recipe is so easy to make, and the cookies are really delicious. I made mine with Chocolate Chips and Dried Cherries, so good. Give this one a try, these cookies are delicious any time of the day.
