Snack Day

Today Thade and I were in charge of bringing snacks for Preschool. Yesterday we were busy in the kitchen getting all of the treats ready. Thade helped out with the veggies, but I had a little problem with the mini muffins. I accidentally burned my first batch, so I ended up making regular sized muffins, and cutting them in half for the kiddos. I think the treats went over pretty well today at Preschool, even though Thade said that he didn’t like the muffins…

December Dinner Menu

The year is drawing to a close, and the weather is getting awfully cold. Winter is definitely on its way, and I’ve got lots of warm Winter dishes to help keep the cold away. Here is my dinner menu plan for December:

  • 12/1/08: Chicken Fajitas, Re-fried Beans, Tortilla Chips, and Cheese Dip

  • 12/11/08: Beef with Rice-a-Roni, and Hominy
  • 12/12/08: Chicken Rings, Fries, and Macaroni & Cheese
  • 12/13/08: Chili and Brownies
  • 12/14/08: Spaghetti, Black Olives, and Garlic Bread
  • 12/15/08: Bean & Cheese Quesadillas, Tortilla Chips, and Cheese Dip

This is one busy month, but I know it is going to be a fun one too!

The Dessert Table Preview

Well I’ve knocked out 2 of the 3 pies this morning, and just as soon as the cake cools I’ll frost it, and off to Church we go. I still have the pumpkin pie and the rolls to go, but at least it is a start.

Thade had a few extra requests for Thanksgiving dinner, so I made a few extra desserts to serve along with the Pumpkin pie. We made a big batch of Snickerdoodle Cookies, Chocolate No-Bake Oatmeal Cookies, and Homemade Chocolate Fudge. My fudge didn’t turn out so great though (humidity, maybe), but Thade still said that he liked it.

The Kitchen is Smelling Good

I’m taking a little break from the cleaning to start on the Thanksgiving Baking. I’m way happier now that I’m busy in the kitchen, baking goodies. So far I’ve made 2 Dutch Apple Pies to take to Church tomorrow, and Thade requested a batch of Snickerdoodles. How could I say no to that…

Tomorrow is going to be a busy day of baking, so I might try and get a few more items made today. I’m baking 2 Peach Pies and an Apricot Bundt Cake to take along with the Dutch Apple Pies. I’m also going on ahead and baking the Homemade Dinner Rolls and Pumpkin Pie for our Thanksgiving dinner. I might make a few more batches of snacks so we have plenty to munch on while we are playing Apples to Apples on Thanksgiving.

Smores Snacks

While we were at Walgreens, waiting on the prescriptions Thade spotted Golden Grahams Cereal, and it was on sale this week. I thought we should grab a box and makes Smores Snacks for us to snack on this week. It sounded pretty good to Thade too.

Gather Up Your Supplies:

  • 6 Cups of Golden Grahams Cereal
  • 1 10 ounce bag of Marshmallows (mini work too)
  • 1/4 cup of Margarine
  • 2 Tablespoons of White Corn Syrup
  • 1/2 Bag of Chocolate Chips (Milk or Semi-sweet, whatever you like best)
  • 2 Teaspoons of Vanilla
  • Don’t forget a Large Pot, Wooden Spoon, 9 x 13 Pyrex Cake Pan for your bars
  • 2 little Helpers to help eat the extra marshmallows

On low/medium heat combine the Margarine, Marshmallows, Chocolate Chips, and Corn Syrup. Once everything is melted and smooth, remove from heat, and add in the Vanilla. Give it a good stir, and add in the 6 Cups of Golden Grahams, and get ready to use those arms and stir like crazy.

When the Golden Grahams are all coated in the Marshmallowy goodness, pour the mixture into your 9 x 13 pan and smooth out gently. Make sure and sample that last bit left on the spoon… Cut into bars and enjoy!

This recipe is also good if you leave out the Chocolate, but my kiddos love Chocolate, so I left it in.
