Green Alien Food

A recent trip to the grocery store with kiddos in tow, I spotted avocados on sale, and I asked Thade what he though they were… “Weird food pods” was the reply. They looked like a good price to me, so I decided to give them a shot. I have had avocados in the past, but I have to admit, I’ve never been much of a fan. I’ve also hit a wall on my super healthy eating, and it’s time to add in some variety.

So I made up a batch of homemade guacamole for me, and it was so tasty. I added in Garlic Salt, and 1/2 of a Lemon. Thade thought it looked like green alien food, but Dylan gave it a try, and he even kinda liked it. I’m heading back to the store today, so I just might have to grab a few more green alien food pods.

Veggie FAIL

I’ve had a few people ask about how the new veggie me is going, and I’m sad to report that week #3 and week #4 were really bad weeks for me. I fell off the veggie bandwagon hard… I had the flu, and then an evil cold, and I was so sick that I didn’t want to cook any extra meals, so it was back to whatever the family was having for dinner. It’s now March though, and I’m finally feeling better, so I’m giving it another go. Wish me luck!

Some Veggie Meals From Week #2

This week I decided to stock the freezer with quick and easy soup. I set my sights on making a big batch of Veggie Stock. I figured it would be just about the same as making Turkey Stock, only without the Turkey part… It was easy, and made a great use out of my leftover veggie sticks, and veggie trimmings too.

Thanks to the Veggie Stock, I made a big batch of Vegetable Soup with Mini Penne Pasta.

When Taco night rolled around, I opted for Taco Shell Tostadas instead.

And when it was Fajita night, I made Bean and Rice Burritos for me, delicious.

Some Veggie Meals: Week 1

I’m wrapping-up week 1 of my return to being a vegetarian, and what a tasty week it was. I thought I would share a few pics from some of my tasty meals.

I’m not much of a breakfast person, I usually just grab a cup (or two) of coffee, but my Coconut-Almond Oatmeal was too good not to enjoy.

One of my favorite things about vegetarian cooking, is that everything is bright and colorful. These mashed sweet potatoes brightened up a dreary winter day.

I made up a big batch of Okra Gumbo, with Brown Rice, and it was so good.

Dylan was even curious about the veggie gumbo, so he gave it a try. Dylan will pretty much eat anything, as long as Okra is involved.

My mashed sweet potatoes pulled double-duty in the kitchen. I used them to make a batch of Sweet Potato Cakes.

A quick Veggie Stir-fry makes a yummy lunch. I served this one with Rice and Oranges.

Time to make a shopping list for next week’s veggie meals!

Kicking Off The Veggie Me

It is February and the start of the vegetarian Nico. I plan to be a vegetarian for the next few months, and see if I start to feel any better. I was a vegetarian for several years before I was married, and I really enjoyed it. I looked better and felt better, and three kids later, my energy is zapped. Time to give it another go.

Today I’m busy in the kitchen making meals for me for the week. I’m still serving a regular menu to the guys, so I am cooking a lot… Today I’ve prepped all of the veggie sticks for the week, along with the citrus fruits. I’ve also got just about every burner on the stove going with a big pot of Vegetarian Okra Gumbo, Mashed Sweet Potatoes, and Brown Rice too.

Yesterday I started off the day with a big bowl of Coconut-Almond Oatmeal, so tasty. I’ll keep everybody posted on how this little experiment goes.
