Thanksgiving Menu

Thanksgiving seems like it is just around the corner, and I haven’t started shopping for it just yet. We’ve been cleaning the house, and getting ready for guests, so at least we have a good start so far.

I have to admit, that Thanksgiving has quickly become my very favorite holiday. I love to cook, and I love spending some time with all of the family. Oh yeah, and there is usually a pie or two.

I’m hosting this year, and I’m planning on serving food all day. I’ll keep the lunch menu easy, and filled with Football-watching food. I’m also going to try and cook ahead what I can, so I don’t have to spend all day in the kitchen.

I’m getting a little help from the guests too. I’m asking for sides and extra desserts. You can never have too many desserts.

Here is the plan for dinner so far…

  • Turkey (this year I’m making two)
  • Ham
  • Mashed Potatoes and Gravy
  • Green Bean Casserole
  • Dinner Rolls
  • Stuffing
  • Noodles

Now for the desserts:

  • Apple Pie with fresh Whipped Cream
  • Chocolate Cream Pie
  • Cherry Pie
  • Pumpkin Pie
  • Coconut Cream Pie with fresh Whipped Cream

I’m sure I’ve forgotten something that I need to add before the big day. What are your favorite Thanksgiving dishes? Do you host, or do you travel for the holiday?

 

 

Thanksgiving Table Runner

This year I am extra excited for Thanksgiving. I’m decorating the house just a bit for the holiday, but my front-door felt turkey is missing… I made a little decoration for the dining room, and the kids picked out some small pumpkins and gourds to decorate with too.

I picked out some Autumn colors of yarn, and made a few granny-squares.

Once I liked the look of the granny-squares, I crocheted them all together with a light brown yarn.

Agnes wanted to help too. I liked the look of the table-runner, but it needed just a bit more color. I picked out some more Autumn yarn, and added in more granny-edges around the runner.

The Thanksgiving table-runner fit the buffet nicely. I can move it to the dining table for Thanksgiving day, or just keep it on the buffet.

It was a fun project to make, and it got me started decorating for Thanksgiving.

Happy Valentine’s Day D.I.Y.

Well, I don’t know if this is one that counts as a d.i.y., but you can bake it yourself. For the last few Valentine’s Days I’ve been making Mini Cherry Pies for my hubby. He loves them, and they make a great dessert for the day.

All you need is enough pie crust for a two crust pie. You can make it yourself, or use the pre-made one. You also need one can of cherry pie filling. I used a large biscuit cutter to cut out the bottom crust, and rolled it just a bit with a rolling pin. I also leave the bottom crust a little thicker. The thicker crust makes it a bit easier to remove.  Make sure you flour your surface well, pie crust dough is sticky stuff.

Pre-heat your oven to 375 F, and grab your favorite 12 ct. muffin tin. I like to add a little shortening to each of cups on the muffin tin, and dust it with just a bit of flour. Once your tin is prepared, carefully add in the dough circles. Patience is the key with this one. Gently press the dough into the bottom of the tins, and carefully up the sides. Leave a little crust at the top, so they are easier to remove.

Add in a small spoonful or two of the cherry pie filling to each of the mini pie shells, and top off the little treats with a decoration of your choice. Lattice tops are extra cute. I free-form cut little hearts for mine on Valentine’s Day.

Pop them in the pre-heated oven and bake them for 10 minutes. At ten minutes remove them from the oven, and top the entire muffin tin with aluminum foil. Return the tin to the oven, and continue baking for another 5-10 minutes. Keep checking it, so your crust doesn’t burn. I know every oven is different, I think my batch of 12 mini pies took about 25 minutes to be just right.

Once the pies are all finished baking, let them sit in the muffin tin to cool. Once they are cool, carefully remove them with a small spoon, and place them on a rack to cool.

Again, patience is key with removal. They are delicate, and some might not transfer perfectly, but you can eat those, or serve a scoop of vanilla ice cream on the side if it isn’t just right.

Good-bye 2012

It is almost time to say hello to 2013! I can’t wait. 2012 has been quite a year, and I’m ready for some new changes in 2013. If you are going out tonight, stay safe, but have a super Happy New Year!

Christmas Eve and Christmas Day

We woke up Christmas eve, and thankfully we were done with the stomach flu.

We needed to run to the store and get all of the supplies for the big day.

I grabbed a cup of Green Tea for breakfast, and booted up my laptop for the kiddos.

The kids wanted to make sure that Santa wasn’t on his way to KS while we were at the store. I think they stayed on the NORAD tracks Santa site all day.

We got all of the groceries in and put away. After lunch we started making cookies for Santa. The kids decided on making no bake cookies, chocolate chip, and iced sugar cookies. We picked up some sprinkles at the store so we could make them cute.

The boys were really into decorating cookies.

Agnes was more into sprinkle eating than decorating.

The cookies were ready, and the kids wanted to check on Santa one more time.

Before we knew it, it was Christmas morning.

Thade was up at 3:30 a.m., luckily he decided to let us sleep in until 6:00 a.m.

Christmas morning was a blur or wrapping paper and kiddos running around the house.

I made some cinnamon rolls, and we had our little family Christmas.

Around lunchtime all of the family arrived, and it was time to celebrate.

The kids were a little excited.

Christmas was a lot of fun. It was so great getting to see all of our family too.

We spent the day together, and enjoyed a tasty dinner together too. The kids didn’t want anyone to go home though. They crashed out early from all of the Christmas fun.

I enjoyed some awesome fudge (from my mother in law) and watched the Christmas special of Doctor Who. It was such a fun Christmas this year.
