Breakfast

I have trouble finding time to make breakfast for myself. I’ll make a Waffle House worthy meal for by hubby on the weekends (he is up and out the door early on weekdays), and the kiddos have a yummy breakfast to start the day everyday, even the cats wake up to a full bowl of kitty food, some how Nico gets neglected in the morning. Most days I’m a grab a cup of coffee and call it good kinda girl 😉  but I end up starving and a little grumpy by 10:00 a.m. Now I’m searching the Internet for a few breakfast recipes to make ahead and stick in the freezer. Then I have no excuse not to stop for breakfast.

I love to make Banana Muffins, and even my hubby likes these. They freeze very well, and I like to double the batch and make 3 mini loaves of Banana Bread (you just have to add about 10-15 minutes extra baking time). I’m also going to check out this recipe for Oatmeal Muffins, they sound pretty tasty to me. The Oatmeal Muffin recipe calls for Skim Milk, but I am going to use 2% I always have that on hand.

I’m getting pretty good at making Baking Powder Biscuits (I use the Betty Crocker recipe), I read in the cook book that you can add cooked bulk sausage into the biscuit dough to bake quick and easy breakfast sandwiches. I just might have to try this one out too, I wonder if they freeze well?

  1. That biscuit recipe with the sausage sounds really good! I’ll have to try that. I miss breakfast too many times myself, just too hard to do with a baby in one arm. The only reason I get coffee in the morning is because Scott makes it before he leaves for work, otherwise I would go without that, too.

  2. Thanks Susan. I know exactly how you feel, it is so hard to do anything with a baby in your arms. Mine is sitting on my lap, and hitting me with a binky 😉 My kids seem to be on completely different breakfast schedules. I get one fed and then it is time to feed the other, and all of the sudden it is 10:30 a.m., and I’m making lunch for James and I’ve completely given up on finding breakfast for me.

    Speaking of coffee, every night while I make dinner, I pre-fill the coffee maker so it is ready to go the next morning for me. I run much better on a cup (or two) of coffee.
