Lunch Is Where I Get Lost

When planning for a no take-out month, I start at my calendar. I divide each day on the calendar by thirds, and map out a meal plan for every meal and for every day. Lunch seems to be where I get stuck. It is so tempting to have my hubby pick-up lunch on the way home from picking up Dylan at school, but I stick to my plan.

I will double a dinner to serve later in the week as lunch. Lunchtime also seems like the time that I can  get away with serving leftovers. Last night’s Pot Roast, becomes a tasty lunch of BBQ sandwiches.

With Thade in school during the week, I can make a little meal for us at home. I will freeze small batches of soups and chili and use my mini Crock Pot for a fast meal.

So far we are doing pretty good without hitting the drive-thru’s. We are still snowed in, but I’ll count it.

  1. Thanks Marva! The kiddos are a little mad at me, but I’m happy with our progress so far 🙂 The snow has helped, the roads are so bad that we can’t really go too far, and I’m using up a lot of items that I had on hand. Every little bit helps the grocery budget.
