Kicking Off The Veggie Me

It is February and the start of the vegetarian Nico. I plan to be a vegetarian for the next few months, and see if I start to feel any better. I was a vegetarian for several years before I was married, and I really enjoyed it. I looked better and felt better, and three kids later, my energy is zapped. Time to give it another go.

Today I’m busy in the kitchen making meals for me for the week. I’m still serving a regular menu to the guys, so I am cooking a lot… Today I’ve prepped all of the veggie sticks for the week, along with the citrus fruits. I’ve also got just about every burner on the stove going with a big pot of Vegetarian Okra Gumbo, Mashed Sweet Potatoes, and Brown Rice too.

Yesterday I started off the day with a big bowl of Coconut-Almond Oatmeal, so tasty. I’ll keep everybody posted on how this little experiment goes.

  2. I’ve been trying to increase my take of fruits and veggies this New Year. I thought of you last night- MorningStar Veg items in freezer aisle all had extra 1.00 off the packs. Maybe you will come across them too!

  5. Thanks Marva! I’m already missing bacon, but I am feeling a bit better energy-wise. The kiddos are worried about the menu though, Thade isn’t a fan of veggies at all 😉

  6. Thanks Heather! Great find! I would have stocked the freezer with veggies too. Hope you are enjoying your extra fruits and veggies in the New Year. I’m enjoying the veggie diet so far, but it is only day 3 😉
