I’m on a mission… A coconut cake mission to be precise. My hubby had this amazing Coconut Cake when he was in elementary school, and ever since then, he has wanted to find this coconut cake that he remembers from his childhood. This has posed an interesting quest for me, as we didn’t go to the same elementary school, and I have no idea what the coconut cake tasted like. So I’m scouring yard sales in the area and looking for vintage cookbooks that just might have the beloved coconut cake recipe.

Wish me luck and check back to see the awesome vintage coconut cakes as they make their way into Nico’s kitchen.

  1. Coconut cake is my favorite cake. I love any and every coconut cake. I wonder if it was the frosting that made his favorite so memorable, or perhaps it was a coconut pudding cake.It will be fun to see what you find!

  2. I am curious too just what it was that made it so good. I have never made a coconut cake, but I would sure serve on a taste testing panel with James!

    I’ll take a look through and see if I can find a coconut recipe, I’ll pass it on to you if I find one!

  5. Alrighty…I could only find one coconut cake recipe in my mom’s stash, and it looks like it just has a coconut topping. But here it is anyway, in case it helps.

    COCONUT MERINGUE CAKE

    Preheat oven to 325F.
    Grease a 9″ square cake pan and dust lightly with flour.

    Cream 1/4 cup shortening…gradually blend in 1/2 cup sugar and beat until light and fluffy. Add 2 well-beaten egg yolks and beat until well combined. In another bowl, blend or sift together 1 cup all-purpose flour, 2 tsp baking powder and 1/4 tsp salt. Add dry ingredients to creamed mixture, alternately with 1/2 cup of milk. Blend after each addition. Pour batter into prepared pan.

    TOPPING:
    Beat 2 egg whites to soft peaks. Gradually beat in 1/2 cup sugar, then fold in 1 cup of coconut. Spread carefully over cake batter. Bake in preheated 325F oven for about 45 minutes.

  6. Thanks Mimi! I’m a fan of coconut cake too, I just wish I had sampled James favorite cake, then I might have a good idea of where to start. I think the quest for the tasty coconut cake is going to be fun, and a good excuse to spend a little extra time in the kitchen.
