We are all still a little under the weather, but we are running out of everything. I made a trip to Dollar General yesterday for Kleenexes and Diapers, and Germ-X too. I’ve been reworking my menu and using what I have on hand, but the pantry is just about out. I hope Dylan is up to a trip out today, he is still sleeping in at the moment, so I know he isn’t feeling too much better. Hmmm what can I make with Chicken and Peanut Butter?
PEANUT BUTTER CHICKEN
1 egg, slightly beaten
1/3 c. Skippy creamy or chunk style peanut butter
1 tsp. salt
1/8 tsp. pepper
1/3 c. milk
8 chicken drum sticks
1 c. fine dry bread crumbs
1/4 c. Mazola corn oil
Mix together egg, peanut butter, salt and pepper. Gradually add milk, beating with a fork to blend. Dip chicken in egg mixture; then add in crumbs. Place in oiled 13 x 9 x 2 inch baking pan. Sprinkle remaining corn oil over chicken pieces. Bake in 375 degree oven for 45 minutes or until chicken is tender. Serves 4.

Too funny Vicki! I love your creative recipe! Nico, I really hope you get out of the house today. I was sad I had to cancel my mommy play date b/c of both kids having small temps. We are housebound today but I have leftovers planned for dinner.

I hope you all are feeling well soon also! I know what you mean about the cold being stubborn. We just had the baby to the dr. about a week ago for the same thing. fever, now he has a cough. I’m going to ride it out a few more days and see how the boys are on Monday before I run to the dr. Probably just need rest and mommy’s love…
