Casserole, Anyone?

I’m trying to sneak comfort meals into the menu, but so far the boy’s aren’t buying it (or biting it). If they see Green Bean Casserole on the menu Dad and Dylan are thrilled, but the mention of Tuna Casserole or Beef Stroganoff gets Nico the dirty looks from the boys, so I’ve decided to try out one of the casseroles on my Mom. Let’s see if she likes it, and maybe she can convince these boys that Casseroles aren’t too bad.

Its Fall, its cool, and what could be better than a Tuna Noodle Casserole for lunch? Well that and a Fresh Pear Crumble for dessert too… And yes, you have to clean your plate to get dessert.

Here is the recipe that I made:

  • 1/2 bag of Egg Free Noodles-cooked
  • 1 can of Broccoli Cheese Soup
  • 1/4 cup of Milk (whole of course)
  • 1/2 cup of Frozen Broccoli Chopped
  • 1 can of Tuna in water (drained)
  • 1/4 cup of Shredded Cheese
  • Dash of Salt, Pepper, and Garlic Salt
  • One Cup of Toasted Homemade Bread Crumbs

First get those Bread Crumbs toasting on the stove in a little bit of butter or margarine, stay close, so they don’t burn. Set your oven to 350 degrees, and gather up all of your supplies. In a large bowl combine the Cooked Noodles, Soup, Milk, Broccoli, and Cheese. Add in a dash of Salt, Pepper, and Garlic Salt… Well maybe 2 dashes of Garlic Salt, it is so tasty. Once the ingredients are well mixed, place the mixture in a baking dish, and top with the toasted Bread Crumbs. Bake for 30 minutes at 350 degrees, and let the casserole cool a bit before you serve it to the kiddos… Even though they have already made up their minds that they don’t want to try the casserole, but I promise, it is delicious.

This casserole was so good, and a big hit with my Mom and me. The little guys didn’t care for it too much, oh well, it is strike one for of my favorite comfort foods.

  1. ohhh that sounds yummy! I am lucky – Jake will eat tuna noodle. He has always been fond of it- I know he’s weird. but that is one thing he will eat. He’s not a big meat eater at all! I’ll be trying your recipe out next week for sure!!!!

  2. HI,
First, I got pics of TY from last week, but need to put them on disc first then I can email them to you.
Next, this week was busy for us. We got the chance to go back to Pittsburgh. And my mom watched the kids! Hubby had business there and we lived there before we moved here, so I went out a day early and stayed with a girlfriend and her kids. Boy did I have fun!! What a luxury to shop and visit and not worry about picking up the kids or naps, diapers, feedings, etc!!!
Now we are home, and hubby got sick as the night went on. He was sick on his stomach- so off to bed he went. Poor guy. I hope he feels better in the morning. And I hope the kids sleep all night for us.
Are you guys over the ickies???????

  3. Thanks Heather! I hope that your hubby is feeling better! I’m sick of having the ickies! It sounds like you both had so much fun, and I bet it was fun to go shop too.

I can’t wait to see your Ty pics. It sounds like the makeover event was awesome 🙂

Let me know if Jake likes the recipe, my kids wouldn’t try it, but they are super picky. I thought it was really tasty though 🙂

  4. Thanks Nana! You crack me up! You still make the best Pork Chops, by far 🙂 We love having you over for lunch, it is always so much fun. Big hugs 🙂

  5. Thanks Mimi! Me too, I just wish I could get my family to love casseroles too. Casseroles are fun and easy to make 🙂

  6. Thanks Susan! This casserole was really tasty, I just wish the kiddos would have given it a try 😉 When I was preggers with Thade I craved Tuna too, with Dylan it was Cakes and Chips and Sour Cream and Onion Dip. Yeah, my first pregnancy was the healthier one 😉
