Monthly Crochet Review: May

The month of May was spent working on ongoing projects.

Right now I’m working on three Christmas blankets…

The Granny-burst blanket is coming along. I’m down to crocheting the last four rows.

The extra cozy grey blanket is coming along nicely.

I’m crocheting hexagon after hexagon for a bright and cheery blanket.

I tried my hand at making a Mandala.

I think I’m going to turn it into a cushion. Maybe I’ll make a few more.

I finally finished the African Flowers blanket.

The African Flowers blanket took me about six months to complete.

It was a fun project to work on.

I love the bright colors along the soft grey stitches.

So that makes two blankets complete, and ready to go for Christmas. Just six more to go, well, maybe a few more…

Out Of Order

This week hasn’t been a very good week. Wednesday, I started to get a migraine, and by Thursday it was still with me. Three days into it, I realized that it was a compound/cluster headache, and I just prayed, and hoped to get through it without the need for a trip to Urgent Care.

Three days out of commission, the house has suffered, the kids are grumpy, and my goodness I have been miserable.

Yesterday afternoon it finally broke, and I was able to cook a meal, and do some laundry. Today I’m going to spend the day on the rest of the stuff that needs done. I’m feeling better, but I really don’t want another one of those cluster headaches to head my way…

May’s Veggie Meals

I made lots of super tasty veggie dishes in May. I tried out a few new dishes, and I made it another month being a happy vegetarian.

I did some experimental Vegan baking. These were pretty tasty, and made a yummy snack.

Pasta with Okra and Tomatoes. So good!

I made a big batch of homemade Macaroni and Cheese with lots of Broccoli.

Here is a yummy vegan dish, Steak Fries, and Roasted Veggies. I had some Zucchini, Tomatoes, Broccoli, and Roasted Corn in this batch. It was so delicious!

We’ve had a few tasty homegrown Strawberries from the front porch.

This is my homemade Veggie-friendly mock rice-a-roni. Rice and Lentils and one delicious sauteed onion.

More Roasted Veggies, this time Broccoli, Cauliflower, Green Beans, and Chickpeas. Hello to a new favorite dinner of mine!

Lastly I made a big batch of baked pasta.

This is a great dish to make to clean out the pantry, and have lunch ready for a few days too.

I’m sticking with my veggie ways through June. I hope to try out a few new dishes too.
