Green Velvet Cupcakes

When it was time for Dylan’s birthday he wanted Green cupcakes. Green just happens to be his favorite color, so I thought I would try to tweak a recipe and make Green Velvet Cupcakes.

I have a recipe for homemade-made-from-scratch Red Velvet cake, but it called for a lot of ingredients that I didn’t have on hand, so I decided to start with a box mix. The thing about red or green velvet cake is it tastes a bit like chocolate, so I added in 2 teaspoons of cocoa powder to a white cake mix, and it did the trick. I also added in 30 drops of green food coloring, and I was pretty happy with the color after the little cakes had baked.

I topped off the cupcakes with my homemade icing for Red Velvet Cupcakes, and they turned out great! Dylan was really happy to have the green cupcakes for his birthday, and he even helped out with the mixing too.

If you aren’t a fan of green the same method would be great to make Blue Velvet cupcakes, or Purple Velvet cupcakes too. Happy baking!

Only 2 Months To Go

We just finished up a week of Spring Break, and how I wish it would have been better… Everyone was sick for the entire week, but the kiddos rallied for Dylan’s birthday. The big kids were back in school today, Dylan was happy, Thade wasn’t. The first day back from a break is always rough. I was filling out the calendar for April when it hit me that we only have two months left to the school year. I’m excited for the kids to get out of school, and for us to get a break in the everyday routine, but I know that come July the boys will be missing their school-buddies.

Today was nice though, and quiet for one short hour. I got a lot done around the house, and the miss was better about taking her naps today too. Hopefully tomorrow morning will go a bit better, and the big kids will be a bit cheerier, Summer vacation can’t come soon enough for Thade.

I’ve Got Spring Fever

Yesterday the weather was amazing, so we got out of a few errands. We ran to a local shop to look for lawnmowers, and they just happened to have adorable baby chicks, ducklings, and baby bunnies too. I also spotted so many items that I want to add to the garden.

Today the weather is chilly, and dreary, so I am looking at paint chips to spruce up the indoors. Maybe if we get a few little projects done it will chase away these Winter blues.
