		<description>Alrighty...I could only find one coconut cake recipe in my mom's stash, and it looks like it just has a coconut topping.  But here it is anyway, in case it helps.

COCONUT MERINGUE CAKE

Preheat oven to 325F.
Grease a 9" square cake pan and dust lightly with flour.

Cream 1/4 cup shortening...gradually blend in 1/2 cup sugar and beat until light and fluffy.  Add 2 well-beaten egg yolks and beat until well combined.  In another bowl, blend or sift together 1 cup all-purpose flour, 2 tsp baking powder and 1/4 tsp salt.  Add dry ingredients to creamed mixture, alternately with 1/2 cup of milk.  Blend after each addition.  Pour batter into prepared pan.

TOPPING:
Beat 2 egg whites to soft peaks.  Gradually beat in 1/2 cup sugar, then fold in 1 cup of coconut.  Spread carefully over cake batter.  Bake in preheated 325F oven for about 45 minutes.</description>
