S for Strawberry Cake

Today’s letter on Sesame Street was the letter S, so I thought I would share my Strawberry Cake recipe… In honor of the letter S.  So here we go!

For the Strawberry Cake you’ll need:

  • 9×13 sheet cake, I’ve used a White Cake for the Strawberry Cake
  • Strawberries (2-3 handfuls, I know very precise)
  • 1/4 Cup Granulated Sugar
  • Whipped Cream and a little Vanilla to flavor it
  • Cutting board, knife, fork, spoon, spatula, and a bowl or two

Let’s get started. First we are going to macerate the Strawberries. I thinly sliced about 3 handfuls of fresh strawberries, and then add them into a bowl with 1/4 cup of granulated sugar. I gave the strawberries a good stir, and mashed them up just a little bit. Then put the bowl in the fridge and let it sit for at least an hour or two, that way the strawberries have plenty of time to get juicy.

Bake your cake, and let it cool. Once the cake has cooled, grab your fork and take out all of your frustrations on the cake, poke it like crazy. You need to make sure that there are lots of tiny holes in the cake so the strawberry juice can seep in and make the cake taste like yummy strawberry goodness.

Time to get the macerated Strawberries out of the fridge and onto the cake. Spread the strawberry/juice mixture generously over the cake, and refrigerate once more.

Right before it is time to serve up this tasty dessert, top off the cake with Whipped Topping. I added in just a little vanilla to my Whipped Topping to make it extra tasty.

Make sure and refrigerate any leftovers, but trust me this cake won’t last too long. My boys loved it!
